Triple Chocolate Bread
This bread is incredibly moist, yummy & healthy! Next time I make it I'm going to try making it in muffin tins so I can put a bunch away in the freezer for snacks. Most people see applesauce in the ingredients and are immediately turned away. Won't the applesauce make it taste like apples? No. It makes it so moist and you don't have to use oil (though I do think using oil is a GOOD thing, coconut oil is my absolute favorite and amazingly healthy). Applesauce also makes it so you don't need much sugar since it's already sweet!!
So, technically these aren't triple chocolate unless you make a glaze to go over them but they are so much yummier and healthier in my opinion without a powder sugar, chocolate glaze drizzled over them. They are still chocolatey enough in my book to be called triple chocolate bread! :-)
Triple Chocolate Bread
1-1/2 cups miniature semisweet chocolate chips, divided
1/2 cup butter, softened
2/3 cup packed brown sugar
2 eggs
1-1/2 cups unsweetened applesauce
2 teaspoons vanilla extract
1 cup all-purpose flour
1-1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
In a double boiler, melt 1 cup chocolate chips; set aside to cool. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs and cooled chocolate; mix well. Add applesauce and vanilla; set aside. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Stir in the remaining chocolate chips.
Spoon into four greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks.
